Winter Squash Medley Recipe
Ingredients:
2 acorn squash, cut in half, seeded 2 cup water 1 tbsp olive oil 1 medium onion, diced 1 clove garlic, minced 3/4 cup rice, uncooked 1 can chicken broth 1 cup turkey, diced, cooked 1/4 cup raisins 1 tsp dried thyme 1/2 tsp dried sage 1/4 tsp black pepper 1/2 cup pecans, chopped gravy, optional
Instructions:
Preheat oven to 400°. Place squash cut side down in 9 x 13 pan. Pour water in pan and bake squash 50 - 60 minutes or until tender. Using saucepan, saute onion in oil until translucent. Add garlic and rice; cook 1 minute. Add broth, turkey, raisins, and seasonings. Bring to full boil. Reduce heat to low and cover, simmer 15 - 20 minutes or until rice is cooked. Stir in pecans. When squash is tender, turn cut side up and fill generously with the stuffing. Return to oven and bake 3 minutes. Serve as is or with a generous ladle of gravy. Source: Pampered Chef Favorites II.
