Turkey Soup (Bouquet Garni Mix) Recipe
Ingredients:
4 qt cooked turkey Water 1 tbsp salt 1 medium onion, chopped 1/2 cup chopped carrots 2 ribs celery, chopped 1 Bouquet Garni Mix, (see recipe) 1/2 cup chopped celery, reserved 1/2 cup chopped carrots, reserved 1/2 cup chopped onion, reserved
Instructions:
Chop the turkey into 2" pieces, and place in a 5-qt stockpot with enough water to cover by 1", salt, vegetables, and seasonings. Bring the mixture to a boil, and skim off the gray scum that will rise. Reduce the heat, so that the soup is at a simmer. Partially cover the pan and simmer for 2 hours. Strain the stock into a large bowl. Allow the soup to stand for 15 minutes. Skim off the fat from the top of the soup, and return the soup to a saucepan. Add the reserved vegetables to the soup and bring the soup to a boil. Reduce the heat and simmer for 15 minutes. Serves 8.
