Turkey Mole Poblano Recipe
Ingredients:
18 oz turkey thighs 1 cup Mole poblano 1/2 cup low-sodium chicken broth
Instructions:
Preheat oven to 350 oF. Spray 8 inch square baking dish with nonstick cooking spray. Place turkey thighs in prepared baking dish; bake, uncovered, about 1 hour. Reduce oven temperature to 325 oF. Remove and discard skin and bones from turkey; shred meat or slice into thin strips. Wipe baking dish clean and arrange turkey in dish. In small bowl, combine mole poblano and chicken broth; pour over turkey. Bake, covered, another 30 minutes. Serving (3 oz turkey with 1/3 cup sauce) provides 1/4 fat, 1/4 fruit, 1 veg, 3 pro, 35 cal.
