Tarragon Pasta And Turkey Salad Recipe
Ingredients:
1 lb Rotini, Twists or Spirals - uncooked 8 oz Smoked turkey, chopped 1 cup Sliced celery 1 1/2 cup Seedless red grapes cut into halves 1 cup Sliced scallions, (white and green - parts) 1 cup Non-fat mayonnaise OR reduced-fat - mayonnaise 1/3 cup Non-fat sour cream OR reduced-fat s - cream 1 1/2 tbsp Chopped fresh tarragon, OR Dried tarragon 1 tbsp Lemon juice Salt and pepper to taste
Instructions:
Prepare pasta according to package directions; drain. Rinse under cold water and drain again.
In a large bowl, stir together the pasta, turkey, celery, grapes and scallions. In a small bowl, stir together the remaining ingredients. Toss pasta with dressing. Add salt and pepper, if desired. Serve immediately or cover and chill.
Each serving provides: 287 Calories; 15.9 g Protein; 52.1 g Carbohydrates; 1.7 g Fat; 15.5 mg Cholesterol; 1023 mg Sodium. Calories from Fat: 5%
