Sloppy Turkey Spuds Recipe
Ingredients:
4 (10 ounces each) potatoes 12 oz Ground turkey 1 medium Onion, chopped 1 medium Green bell pepper, chopped 1 cup Sliced mushrooms 1 Jar or can marinara sauce -OR- other vegetarian spaghetti sauce (14 or 15 ounces) Salt and pepper, to taste 1/4 cup Chopped parsley 1/4 cup Grated Parmesan cheese
Instructions:
Pierce potatoes with tines of fork; microwave on HIGH 20 to 22 minutes until potatoes are fork-tender. Meanwhile, in large nonstick skillet over medium heat saute turkey until no longer pink, about 6 minutes. Add onion, bell pepper and mushrooms; saute, stirring, 3 minutes. Stir in marinara sauce; bring to boil, reduce heat, cover and simmer 10 minutes. Season with salt and pepper; stir in parsley. Place potatoes on 4 plates; split and fluff. Top potatoes with turkey mixture and cheese, dividing equally.
NOTE: Microwave cooking times are based on a 700-watt microwave. Adjust cooking times to your own oven.
