Sicilian Style Turkey Sausage ^ Recipe
Ingredients:
5 Feet small hog or sheep -casings 5 lb Turkey meat-15% fat 2 tsp Whole fennel seed 2 tsp Crushed fennel seed 2 tsp Crushed red pepper-optional 2 tsp Salt, or to taste 2 tsp Black pepper 1 tsp Garlic powder -OR- 2 cl Very finely minced garlic
Instructions:
Prepare casings.
Using fine disk, grind turkey, mix with remaining ingredients and grind again.
Stuff into casings and twist off into 3" links.
Cook in vegetable oil until browned and cooked through.
