Orzo & Smoked Turkey Salad Recipe




Ingredients:

1 cup Orzo pasta
6 oz Smoked turkey breast, cut
In 1/4" cubes
1/2 cup Green onions, thinly
Sliced
1/4 cup Red cabbage, finely
Shredded
1/4 cup Fresh cilantro, chopped and
Loosely packed
3 tbsp Lemon juice
2 tbsp Regular or lowfat
Mayonnaise
2 tsp Olive oil


Instructions:

Cook the orzo according to the package directions, but without adding
the salt. Drain, then rinse with cold water and drain again.

In a large bowl, combine the orzo, turkey, onions, cabbage and
cilantro. In a small bowl, stir together the lemon juice, mayonnaise
and oil. Add to the orzo mixture and toss until well coated. Recipe By
