Merry Mini Muffins Recipe
Ingredients:
ORANGE MINI-MUFFINS: 3/4 cup milk 1/3 cup vegetable oil 1/4 cup frozen orange juice concentrate, thawed 2 tsp grated orange peel 1 egg, slightly beaten 2 1/4 cup gold medal® all-purpose flour 1/2 cup sugar 3 tsp baking powder 1/4 tsp salt 1/4 cup sugar 1 1/4 tsp grated orange peel FILLING: 18 thin slices smoked turkey, cut in half 3/4 cup frozen (thawed) cranberry-orange re sauce
Instructions:
Bake Orange Mini-Muffins. Cool completely, about 20 minutes. Split muffins horizontally in half.
Place turkey piece on bottom half of each muffin. Top with 1 teaspoon cranberry-orange relish. Add muffin top. Place on serving plate.

Orange Mini-Muffins
Heat oven to 400°. Grease bottoms only of 36 small muffin cups, 1 3/4x1 inch. Beat milk, oil, juice concentrate, 2 teaspoons orange peel and the egg in large bowl with spoon until blended. Stir in flour, 1/2 cup sugar, the baking powder and salt all at once just until flour is moistened (batter will be lumpy). Divide batter evenly among muffin cups. Mix 1/4 cup sugar and 1 1/4 teaspoons orange peel; sprinkle over batter in cups. Bake 10 to 15 minutes or until light golden brown. Let stand 5 minutes; remove from pan.
TIME-SAVER: Purchase orange mini-muffins from the bakery section of the grocery store to save time while preparing for a holiday party.
VARIATION: Sliced ham or chicken would also be tasty in these muffins. Vary the flavor by using your favorite chutney, orange marmalade or apricot spreadable fruit.
SPECIAL TOUCH: Spear 1 or 2 cranberries (fresh or dried) and a twist of orange peel on frilled toothpicks; secure muffins with toothpicks.
