Hot German Potatoe Salad (2 Pts) Recipe
Ingredients:
7 medium Red Potatoes (about 2 1/2 Lbs.) Vegetable Cooking Spray 1 package Frozen Seasoning Blend (10 Oz.), such as -Mckenzies 2 cup Kale, thinly sliced 1/2 tsp Pepper 3/4 cup Bottled Fat Free Hous Vinaigrette ( -Family Recipe) 4 Turkey Bacon Slices, cooked and drained
Instructions:
Place potatoes in a large sauce pan, and cover with water; bring to a boil. Cook 25 minutes or until tender; drain. Let cool slightly. Cut potatoes into 1/4 inch slices.
Coat a large nonstick skillet with cooking spray; place over medium high heat until hot. add seasoning blend, and saute 4 minutes. Add kale; cover and cook an additional 2 minutes or until kale wilts.
Combine potato slices and kale mixture; sprinkle with pepper. Add vinaigrette; toss gently. Sprinkle with bacon. Serve warm.
