Garden-Style Turkeyloaf Recipe
Ingredients:
1 1/2 lb ground turkey breast 1 package frozen chopped spinach - (10 oz), thawed, drained 1 cup Quaker Oats (quick or old fashioned, uncooked 1/2 cup finely-chopped onion 1/2 cup shredded carrots 2 egg whites or 1 egg, lightly beaten 1/3 cup skim milk 1 1/2 tsp Italian seasoning 1 tsp salt, (optional) 1/4 tsp freshly-ground black pepper
Instructions:
Heat oven to 350 degrees. In bowl, combine all ingredients. Mix lightly but thoroughly. Shape mixture into 9- by 5-inch loaf in baking pan. Bake 1 hour or until thermometer registers 170 degrees and center is no longer pink. Let stand 5 minutes before slicing. This recipe yields 8 servings. Variation: Substitute 1/2 cup finely-chopped green or red bell pepper for spinach.
