Fruited Tabbouleh With Smoked Turkey Recipe
Ingredients:
1 cup bulgur 2 cup boiling water 1 red apples, cored and chopped 2 lemons, juice of 1 cup red grape halves 1 cucumber, peel, seed, chop 1/4 cup raisins 1/4 cup chopped parsley 1/4 cup chopped mint 1 tbsp olive oil 1/4 tsp salt 8 oz smoked turkey, chopped 1 oz walnuts, chopped 1 head radicchio
Instructions:
In medium bowl, combine bulgur and boiling water; cover and let sit until all the water is absorbed, about 30 minutes. Meanwhile, in a medium bowl toss apple in lemon juice. Add grapes, cucumber, raisins, parsley and mint; toss. Add bulgur, olive oil and salt. Stir to combine. Fold in turkey and walnuts. Refrigerate covered for 1 hour. Serve on a bed of radicchio.
