Fruit Stuffed Turkey Breast Recipe
Ingredients:
1 package (6 oz) diced dried fruit -and raisins 1/2 cup Apple cider or apple juice 1 1/2 tsp Chopped fresh or 1/2 tsp. -dried mint leaves 1/8 tsp Salt 4-5 pound turkey breast
Instructions:
Heat oven to 375øF. Heat dried fruits, apple cider, mint and salt to boiling in 1 1/2 quart saucepan; reduce heat. Simmer uncovered 6 to 8 minutes or until fruit absorbs cider.
Loosen turkey breast skin gently with fingers as far back as possible without tearing skin. Spread fruit mixture over breast meat; cover with skin.
Place turkey, skin side up, in shallow roasting pan. Insert meat thermometer so tip is in thickest part of meat and does not touch bone. Cover tightly with aluminum foil. Bake 1 hour 55 minutes or until thermometer reads 170ø and juice is no longer pink when center is cut. Let stand 15 minutes before carving. Remove and discard skin. Cut turkey into 16 slices.
