Ditalini Cobb Salad 1 Recipe
Ingredients:
12 oz uncooked ditalini, elbow macaroni or other 1 medium pasta shape 3/4 cup plain yogurt 1/4 cup mayonnaise 12 oz smoked turkey, diced 2 ribs celery, diced 1 Granny Smith apple, diced 1 head green leaf lettuce leaves, separated, washed- drained 2 oz crumbled blue cheese
Instructions:
Prepare ditalini according to package directions. Drain and rinse with cold water Place yogurt and mayonnaise in food processor or blender; whirl until smooth. set aside. In large bowl, stir together ditalini, smoked turkey, celery and apple. Add yogurt mayonnaise sauce and toss until evenly coated. Cover serving platter with lettuce leaves; spoon pasta onto lettuce. Sprinkle blue cheese on top. Toss lightly and serve.
