Curried Turkey Spaghetti Recipe
Ingredients:
1/2 lb ground turkey OR 1/2 lb lean ground beef 1/2 cup chopped onion (about 1 medium) 1 clove garlic, finely chopped 3/4 cup chopped unpeeled tart eating apple 1 medium) 1/4 cup chopped fresh parsley 1 1/2 tsp curry powder 1/2 tsp ground cumin 1/8 tsp ground red pepper (cayenne) 1/4 cup unsweetened apple juice 16 oz whole tomatoes, undrained 6 oz uncooked spaghetti 2 tbsp chopped dry-roasted peanuts
Instructions:
Cook ground turkey, onion and garlic in 10-inch nonstick skillet over medium heat, stirring frequently, until turkey is no longer pink; drain. Stir in remaining ingredients except spaghetti and peanuts; break up tomatoes. Heat to boiling; reduce heat. Simmer uncovered about 5 minutes or until apple is tender, stirring occasionally. Cook spaghetti as directed on package; drain. Serve sauce over spaghetti. Sprinkle with peanuts.
