Curried Black Beans And Rice (5 Pts) Recipe
Ingredients:
1 tbsp olive oil 1 medium onion, minced 1 tbsp curry powder 1/2 lb smoked turkey sausage, sliced thin 3/4 cup fat-free chicken broth 2 can black beans, (16 ounce) drained and rinsed 1 tbsp wine vinegar 3 cup cooked rice
Instructions:
Heat oil in large heavy skillet over medium heat. Add onion and curry powder; cook, stirring frequently, until onion is tender. Stir in turkey sausage and broth; simmer 5 minutes. Stir in beans; cook until hot, stirring constantly. Remove from heat; stir in vinegar. Spoon over rice.
Per serving: 242 calories, 3 grams fat, 10 milligrams cholesterol, 41 grams carbohydrates, 4 grams fiber, 14 grams protein, 278 milligrams sodium.
